HISTORY OF NEW ORLEANS RED BEANS AND RICE
While in New Orleans, I took cooking classes to learn about authentic Cajun recipes, cooking methods, and food history.
There's a rich, long-standing tradition surrounding Louisiana red beans and rice. This nostalgic New Orleans landmark became a phenomenon in the early 19th century.
The clothes were usually washed on Mondays. It was an all day task. The clothes were boiled, wrung out with a crank and hung on a clothesline. For Monday dinner, home cooks were looking for a simple, no-fuss meal.
Red beans and rice were the perfect match. It was a great way to use up leftover pork bones and ham from Sunday night dinner. Sauteed vegetables, meat and spices were added to the previously soaked beans. The unattended pot was left to simmer on the stove while chores were done.
Today, red beans and rice are still served on Mondays in many traditional NOLA houses. But this dish is also popular on other days of the week. It appears on the menu of some of the city's finest restaurants.
My favorite thing to eat is authentic red beans with riceby Pat O'BrienRestaurant and bar in the heart of New Orleans' French Quarter.

INGREDIENTS FOR RED BEANS AND RICE
All you need to make this NOLA favorite are a few meaty ingredients, common veggies, spices, and staple foods.
In order to achieve the characteristic taste of NOLA red beans and rice, it is important to use the 3 pork products listed below.
- New Orleans Camellia brand dried red beans or El Mexicano brand red beans (red kidney beans)

FREQUENTLY ASKED QUESTIONS ABOUT INGREDIENTS
- ARE RED BEANS THE SAME AS REGULAR BEANS?Not quite! Kidney beans are smaller, about the size of pinto beans. The skin of haricot beans is too tough and the flesh is too floury for this recipe. If you don't have access to camellia beans, look in the Hispanic section of the supermarket for small red beans: El Mexicano brand red beans (red kidney beans). They cook creamy and their skin is tender.
- WHAT IS LOUISIANA TASSO?Often used in Cajun recipes, tasso is "almost" like ham. Instead of coming out of a pig's hind leg, it comes out of the pig's shoulder. It is used to flavor a variety of dishes, it is very spicy, smoked and pickled. Gives depth of flavor with a spicy kick! This southern Louisiana specialty is hard to find in other states.
- WHAT IS PICKLED PORK?It's pickled pork shoulder. Outside of Louisiana, this Cajun ingredient is very hard to find.
- DIFFERENCE BETWEEN PLAIN PEPPERS AND SMOKED PEPPERS: Common peppers are made from the ground pulp and skin of dried red peppers. Smoked paprika comes from peppers that are smoke dried over an oak fire and then crushed. It is often called Spanish pepper.

How to make red beans and rice
This is a quick, easy, and no-fuss recipe. It starts the night before and ends the next day. Here's how to prepare for this tasty dish.
RECIPE PREPARATION:In a large saucepan, add 4 liters of water and 3 tablespoons of salt. Hit to combine. Add the beans to the pot and salt for 8 to 24 hours.
THE NEXT DAY:Drain and rinse the beans in a colander, then return to the pot. Pour the chicken broth and water over the beans. Bring to a boil.
HOW TO MAKE RED BEANS
Follow this easy step-by-step recipe for authentic New Orleans red beans and rice!
- STEP 1:Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When the oil is simmering, add the chopped ham. Cook for 2 minutes, stirring frequently.
- STEP 2:Put the onions in the pan. Fry until the onions become tender and translucent. Add the garlic and cook until fragrant. Add peppers and celery. Season with salt and black pepper. Fry until tender. Add smoked paprika powder, cayenne pepper, thyme, sage, basil, oregano and bay leaves. touch her. Transfer the roasted vegetables to the bean pot over low heat.
- STEP 3:Heat 1 tablespoon olive oil in skillet over medium heat. Fry sausage and ham until golden brown. Transfer the meat and its juices to the pot. Add a dash of vinegar.

STEP 5:Remove ham and bay leaves. Press 1/4 of the beans against the edge of the pot with a large spoon. Add parsley. Simmer for another 15 minutes until creamy. Add a dash of vinegar.
BEFORE SERVING:Taste and season to taste. If the beans are too thick or dry, add water, 1/4 cup at a time.
HOW TO MAKE RICE
Prepare the rice about 35 minutes before eating.
Do not follow the instructions on the rice package. The ratio of rice to liquid is usually given as 1 to 2. Instead, we make this NOLA recipe with less water. The result will be tender and fluffy rice! That's how it is done.

RECIPE PREPARATION:To make fluffy white rice, we need to flush out the starch. Put the rice in a sieve. Rinse the beans until the water runs clear.
INSTRUCTIONS FOR WHITE RICE
- STEP 1:Melt the butter in a small saucepan.
- STEP 2:Put rice in the pot. Fry until the rice is fragrant and becomes translucent. Add water and salt. Bring to a boil over high heat.
- STEP 3:Reduce heat to a minimum. Cover the pot with a lid. Let the rice simmer for 18-20 minutes or until the water is absorbed.
- STEP 4:Take the pot off the stove. Wrap the lid of the pot in akitchen towel. Place the towel-wrapped lid back on the pot. Let the rice steam undisturbed for 10-15 minutes. Fluff up with a fork.

HOW TO SERVE THIS DISH:Serve the kidney beans over cooked white rice. Garnish with spring onions and some more chopped parsley. Enjoy the tradition of this Monday while the clothes dry on the clothesline! Serve with Tabasco sauce or hot Louisiana Crystal sauce. Enjoy with a side of cornbread.
