Chicken and dumpling casserole is a comforting and delicious dish that is a favorite of many families. The classic version of this recipe involves layering chicken, veggies, creamy sauce, and homemade sponge cake in an ovenproof dish; after baking the dish, the sponge cake turns into fluffy dumplings that absorb all the flavors of the other ingredients. Video recipe:
Preheat oven to 400°F and spray a 9" x 13" baking dish with nonstick spray, then set aside.
Now, in a large saucepan or deep pan, heat the olive oil over medium-high heat. Add the carrots, onions, and peas and cook, stirring regularly, for 5 to 7 minutes.

Sprinkle the flour over the vegetables and cook for 1 minute while stirring. Then pour the chicken broth into the saucepan along with the cream from the broth.

Add the rosemary sprig and cook until the sauce thickens, about 7 to 10 minutes.

Remove and discard the sprig of rosemary from the mixture, then mix with the shredded chicken. After thoroughly mixing, pour this mixture into the prepared baking pan.

Now make dumplings. First, sift the flour, baking powder and a pinch of salt into a bowl.
Then add the egg and milk and knead until you get a sticky dough.
Lightly spritz a scoop of ice cream or a large spoon and scoop out 6 dumplings from this mixture and place on top of the chicken mixture.

Bake for 18 to 20 minutes until bubbles and dumplings are done.

What is a good thickener for chicken and dumplings?
Roux is the best thickener for chicken and dumplings. A roux is made by combining equal parts butter and flour and cooking until a paste is formed. It is usually the base to which broth or cream soup is added and makes a creamy sauce for that dish.

Can I make gluten free chicken casserole with dumplings?
Yes, you can make gluten-free chicken casserole with dumplings. Just use gluten-free flour when making the roux, and you can use store-bought gluten-free cookies instead of homemade sponge cake.
If you want, you can use the same gluten-free flour for sponge cakes as well. Thanks to this, your dish is safe for anyone who cannot tolerate gluten or is hypersensitive.
What's the best way to reheat chicken and dumplings?
The best way to warm up a casserole with chicken and dumplings is in the oven. Preheat oven to 350°F. Place an ovenproof dish in the oven and bake for 10-15 minutes or until heated through. You can also microwave them for a few minutes, but this will soften the dumplings.
